Sweet Potatoes Quinoa Burgers with Lemon Tahini
- 250g gluten-free plain flour
- 1tbsp cinnamon
- 1tsp all spices
- ½ tsp nutmeg
- ½ tsp ginger
- 1tsp baking powder
- 1/2tsp baking soda
- 4 eggs
- 6tbsp melted coconut oil
- Zest and juice of 1 large orange
- 220g carrot
- 120g pecan nuts
- Yogurt to serve
Place pecan nuts in mixing bowl chop 1 sec/speed 5, set aside.
Weigh carrot chunks into mixing bowl grate 5 sec/speed 5, set aside.
Add all remaining ingredients in mixing bowl then mix 15 sec/speed 5, scrape down sides of bowl again mix 15 sec/speed 5.
Add carrot and pecan nuts set aside earlier and stir 30 sec/ reverse speed 3.
Pour batter into loaf tin and bake for 35 to 45 min.
