No Bake Nut & Seed Breakfast Bars

This recipe takes just 10 minutes to make and is packed full of seeds and nuts. Perfect for lunch boxes and healthy snacks.

Ingredients

  • 100g almonds

  • 40g plain puffed rice

  • 25g pumpkin seeds

  • 25g sunflower seeds

  • 40g desiccated coconut

  • 2tbsp ground flaxseed

  • 1tbsp chia seeds (optional)

  • 100g almond butter

  • 50g honey

  • 30g coconut oil

  • Pinch of salt

 

1- Prepare a 20cm x 20cm tin by lining it with plastic wrap.

2- Place almond in mixing bowl and place the simmering basket on top, pulse turbo/ 1sec and set aside.

3- Place almond butter, coconut oil and honey in mixing bowl gently warm 30 sec/40°C/speed 1.

4- Add all ingredients in mixing bowl and stir 15 sec/reverse speed 3

5- Transfer the mixture to the tin and press down well. Place a layer of plastic wrap on top.

6- Leave in the fridge to harden for at least an hour (or the freezer for 30 min)

7- Then remove from the tin and remove plastic wrap. Cut into eight bars and wrap in foil ready to go.
