Ingredients

250g gluten-free plain flour

1tbsp cinnamon

1tsp all spices

½ tsp nutmeg

½ tsp ginger

1tsp baking powder

1/2tsp baking soda

4 eggs

6tbsp melted coconut oil

Zest and juice of 1 large orange

220g carrot
-
120g pecan nuts

Yogurt
1- Place pecan nuts in mixing bowl chop 1 sec/speed 5, set aside
2- Weigh carrot chunks into mixing bowl grate 5 sec/speed 5, set aside
3- Add all remaining ingredients in mixing bowl then mix 15 sec/speed 5, scrape down sides of bowl again mix 15 sec/speed 5
4- Add carrot and pecan nuts set aside earlier and stir 30 sec/ reverse speed
5- Pour batter into loaf tin and bake for 35 to 45 min
